Gaggenau’s 400 series combi-steam is less an appliance than a commission: hand-finished in Lipsheim, France, with a solid stainless interior, a door that swings with vault-like weight, and climate control precise enough for professional sous-vide.

Five humidity levels combine with convection from 30 to 230 degrees — bread with a shattering crust, fish at exact translucence, vegetables at the peak of colour. It is the oven chefs specify for their own homes.
